Garlic Butter Salmon with Asparagus & Roasted Potatoes

Ingredients

  • 2 salmon fillets
  • 500 g baby potatoes
  • 1 bunch asparagus
  • 3 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic (minced)
  • Salt & black pepper
  • Chopped parsley (optional)

Step by Step

  1. Preheat oven to 200°C / 400°F.
  2. Toss potatoes with olive oil, salt, and pepper.
  3. Roast for 30–35 minutes until golden.
  4. Season salmon with salt and pepper.
  5. Pan-sear salmon in olive oil, 3–4 minutes per side.
  6. Add butter and garlic; spoon over salmon.
  7. Sauté asparagus with a little oil for 4–5 minutes.
  8. Serve everything together and garnish with parsley.

Step by Step

  2. Boil eggs for 6–7 minutes, then peel and cut in half.
  3. Cook asparagus in a pan for 4 minutes.
  4. Place rice in a bowl.
  5. Add salmon, avocado slices, eggs, and asparagus.
  6. Season lightly and serve warm.
